Tropical Baked Oats 

Vegan

Serves 1

Ingredients:

1/2 cup oats (use GF option if required.)

1/2 cup nut milk

1 tsp baking powder

1 tsp turmeric

1/2 banana, mashed

About 1/4 cup mango, chopped

Dash of vanilla extract

2 tbsp. coconut yoghurt

Method:

  1. Preheat oven to 180°C.
  2. Mix together all the ingredients (except coconut yogurt), then pour into a ramekin or oven safe bowl.
  3. Bake for about 25 minutes until golden.
  4. Serve baked oats topped with coconut yoghurt, and extra fresh mango + hemp seeds.
